I had a similar requirement - to have Apple TV show subtitles whilst watching Discovery+
The answer ? Simples !
Just press the mic button: -
and ask "Please turn subtitles on"
It worked!
And, perhaps unsurprisingly, the reverse also worked - "Please turn subtitles off"
